Brie in White sauce?!!

Here's what I concocted for dinner last night. I should mention that I find great fulfillment and joy in cooking things, in fact I think about it more than 5 times during the day, what I'm going to whip up when I get home from work and school. I look so forward to that time in the kitchen! I bought some spinach spaghetti from Sunflower Market and decided to try it last night, so I chopped up green onion, garlic, red onion, asparagus, mushrooms and green beans, sautéed those in a pan with some butter and fresh marjoram, salt and pepper. Then while I boiled the spaghetti, I thought I would make a white sauce, so I put some milk in a saucepan, added chunks of brie cheese, and stirred until it melted, adding a pinch of nutmeg and salt in the process. When that was smooth, I added about a tablespoon of whole wheat flour to thicken it up, and there was my discovery about white sauce, adding brie cheese made it rich and creamy. So I toasted some walnuts and then put the sauce on the pasta with vegetables. It was a happy moment as I sat down to eat my lovely creation. And the happiness was again felt as I heated it up at work today for lunch. Nothing like good food.

  1. I love brie but have never thought to put in a white sauce. I will have to try that very soon.
